Sunday:[p]Set the Egg on Nuke. Seared ribeyes and strips 90 seconds each side. Set to rest. Dumped another 2 pounds of lump to get the temp down quick. 400 degrees in no time. Planked wild salmon that a neighbor brought over while the steaks were resting. A nice vidalia mustard crust. Finished the steaks at 400 to med rare. Neighbors: "These are the best steaks I have ever had in my life!"[p]The only downside is that because we accomplished a multi temp cook on the large, my wife now challenges my requirement for a small.[p]This too shall pass. Thanks TRex and all the others that make Egging what it is.[p]Kip
