Gotta give it to my butcher..he has gotten pretty good about having these 21 day aged prime cut bone in ribeyes whenever I have a hankering for one...picked up a couple today...

Tried a lil diff setup for the searing..guess u could call this a cross between cave man and standard...used the CI grate from my small in the spider of my large...gets the steaks right on top of the coals
Worked pretty good
During the rest, I placed the large CI grate on the firering and finished the cook on it...
Used DP Raisin the steaks on both of these and finished with a butter/cracked pepper melt when I pulled them to rest...I just cant seem to get any finished pix lately..get busy and forget! :blink: :pinch: :woohoo:

You're a braver man than I am with a fire like that on your porch. The dry aged steaks we got at Wegmans really didn't taste any different. Gotta try them from Whole Foods theirs look better. The few butchers around here don't carry dry aged meat of course they will order it for you. -

see if he will double the time to 6 weeks. no kidding, they're more than twice as good. 21 days is no slouch though -

Actually using the spider and small CI grate like I did, the fire is more completely down inside the egg and safer imho...I'm not sure the aging affects the flavor so much as the tenderness of the meat..I can tell a HUGE difference in these steaks and your garden variety Kroger or wherever meat -
Quick question.
You used the CI grate for the small, would the CI grate for the medium fit down there? The small is 13", the medium is 15".
I have a large, but received a medium CI grate as a gift. Seeing your pic, I'd like to use the medium down there.
