Great looking steak Steve. I'm really wanting a Mini. I also want a small. I go back and forth on which one to get first. This week I'm all about the small. You and your mini pics usually steer me back to the mini

You have to talk to a butcher, There are a bunch of names for it..Butcher steak, New York steak. They are absolutely the most flavourful I have ever had. Like skirt but more tender.

Good looking cook Steve. It seems like you use your mini a lot. Is it really that handy? What are the advantages to using the mini vs. the large other than using less lump?

The mini and the small don't really compare that well. The mini is a firecracker, up to heat in no time, the small is more a traditional egg. My opinion...you need both :laugh:

The mini is relatively new to me. I have quite a few eggs . I have only used the mini for sear and dwell cooks. It is just fun to cook with. Light it, it is up to heat in minutes, just a fun machine. Don't know any other way to describe it.

Good lookin cook. Hanger steaks are a nice cut of beef. I have trouble finding them here in southern California, they seem to be more of an east coast cut. If anyone in LosAngeles area knows a butcher that has this cut please post.
