Weekend Chili

Since we finally had another cold weekend, I figured it was time for some chili. This is a no beans, lots of beef recipe that translates great to the egg because it calls for slowing cooking anyway.
Just put on the egg with a couple of chunks of hickory. I left the top off for the first 2 hours to get a good smoke flavor.
5 hours later, its ready to go.
Final result with a little shredded cheese and sour cream.

I can't take any credit for the recipe other than putting it on the egg. I found this several years ago and it is my go to for chili now.

This time I made half the recipe, but with more than half the beef. Any kind of stew beef will do, just trim it up good. The basic recipe is not real spicy, just real flavorful. The raw beef really soaks up the smoke and gives it something that the oven version never had. -
Chopped up anaheims and plain old green pepper. I just posted a link to the recipe. The basic recipe is not very spicy hot, but I occasionally add in some jalapenos or hot sauce. I've been wondering what a death pepper would do to it? I'd have to try that sometime by myself because the wife no likey really hot stuff.

Any kind of stew beef. Since it's a nice long cook there is no browning and it just melts in your mouth. Just toss it all in together. -
