you are better off going by feel. but 190-195 is good. Just make sure you aren't to close to the bone and the tip is actuallt in the center of the meat between the ribs

Ribs are one of the very few things that you use time, not temp., to tell when they are done.
Find out the 3-1-1 method for Babybacks, or 3-2-1 for Spares. Much betterer.
