Cold Rainy morning in So. Cal. made some Beans

Cold and wet.
Time to cook up some Beans
They just have to cook for 4 or 5 hrs. at 300*
They are ready
Cowboy Beans or Ranch Beans
"Cowboy Beans" or Ranch Beans or whatever.
2 Lbs. pinto beans, rinsed sorted and soaked overnight (or quick soak. Boil for 2 minutes and let stand 1 hour and drain and rinse.)
1/2 stick of butter
1/2 pound bacon, diced
1 onion, chopped
1 bell pepper, finely chopped
3 tomatoes, peeled and chopped, ( explained how to peel tomatoes before)
3 to 4 cloves garlic, minced
3/4 cup chili powder
1/2 to 1 tsp cayenne pepper (depending on your taste)
1 - 6 oz. can tomato paste
1 cup chopped cilantro
3 qts. chicken broth, the kind you get at the market
Liquid smoke and tabasco sauce to taste
Melt butter in large pot or dutch oven. Add bacon and next 4 ingredients and saute' for about 4 or 5 minutes until vegies are tender but not burned. Add cilantro, chili powder, cayenne and tomato paste and cook about 3 minutes. Add beans, broth, salt and pepper to taste, bring to boil then lower heat and simmer 1 1/2 to 2 hours or 'til beans are tender. During this time liquid smoke (remember, a little of this stuff goes a long way) and tabasco and adjust seasonings to taste. If you want this thicker you can mash beans against the side of the pot to thicken.

I wish I had some of your cold weather - it would warm us up a little.
I have been wondering about the type of heater you have in the picture. Need something to relieve some of the cold when doing our cooking in the winter. 20° to -15° standing next to the egg most of the time.

I was going to make a remark about that too. You and Ross's cold and rainy is our freezing and snow. Looks like it is going to hit here this weekend. It sure would be nice if it was just rain.

Sorry hadn't seen your post...to busy with the brisket.... those beans look just as good as the ones at my parent's house..the ingredients are practically the same..just my father added the Tabasco only to his own......will give them a try...first time I see them on the egg TKS for the recipe!! -

Very close to Salt Lake. The southern part (both east & west) of Utah has some wonderful camping & some great 4 wheeling as well as some great white knuckle 4 wheeling.

Yea, he is just rubbin it in. I wouldn't think it would be needed much at all.
I have to wear knee pads here when winter cooking up here. Knees keep banging together.

Steve, on the egg, it is hard to make beans that are not good.
Even a very simple split pea soup is great on the egg.
The recipe Ross put up looks really good.
Also, check out thirdeyes site for some great beans/soups.
