I got a magazine from the Culinary Institute today, its really more of a catalog of cooking classes they are putting on. It is called Taste. If you happened to get a copy of it look on page 24, there is a course on live fire cooking and it says you will be cooking on a gas grill, Big Green Egg, and the Caja China. The CIA has good taste. -RP

i graduated from the cia in 2000, i am so glad to see they are offering classes on open fire cooking that is great, and that book was basically our main text book. you guys ever use the caja china box its not an egg but different tool. its a big metal box on wheels you can fit a 60 pound pig inside you put the top on and light a charcoal fire on the lid of the box , its like a portable fire in the ground! i think its like $250 ! Really crispy skin!

I visited the site of the new CIA location about to open in San Antonio. It's on the site of the historic Pearl Brewery. Quite a renovation going on there.
