Do I have to brine these for a few hours or can I just egg them?
is it better to do these at a low temp like 250 for a few hours and what temp is good before pulling them.?
Oh by the way The Temp here today will be 80 with clear blue skies

Both ways are good but I prefer not to brine and cook 300-325 indirect to 180 internal

About how long does it take to get to 180 at the 300 - 325 range? Thx
