Hey there, Chef... Any ideas for a less, artery-clogging "fattie"? I'm seriously trying to keep my pipes clean! I've tried the beef & pork versions but wonder if something less invasive would work. Any ideas? As always, TIA...

Fattie and Healthy are two words that don't go together.
You could grind your own sausage and use leaner pork or use a lean pork, turkey mix.
There is a one word that comes to mind when dieting - MODERATION.
A slice or two of a fattie per month shouldn't kill ya any faster than the pills you take to cut Cholesterol. -

Just a heads up, I recently found Jimmy Dean Sausage w/1/2 the fat. They tasted awesome and not as greasy as the regular ones, so if you check out your local market try some. And if they don't have them ask for them.

What recipe are you using. When you do a search for them you get a gazillion posts. Just wondering if you or anyone has a tried and true recipe.

There are about as many recipes for Fatties as there are for ABT's.
The simplest being taking the roll out of the package and roll it in your favorite rub and slow cook it at 250 till 165-170 internal.
