Hey just wondering if anyone has any good ideas for centre cut side ribs? (temp, duration, smoke, direct/indirect, etc....)?

    Options
    Be more specific on your meat cut. The common terms are Babyback, spares, St Louis style, country style. This will help you get a better response from the group. Most of the babybacks and St Louis style will cook at 240/250 for 5 hours or so. Spares a little longer. Country style are cooked a little hotter for a shorter amount of time. There are many ways to cook ribs. Good luck, Tom

    Well, side and belly ribs are common names, but the mention of center cut got me confused. I was wondering if was the center of a bone-in loin roast.....
