18 pounds and the pan should be big enough to fit the bird and small enough to fit the grate 13/14 inch should work.

On the large their recommendation is a big conservative.
Using Max's method, I have cooked 21# to 23# on the large. I have to watch the dome thermometer probe but other than that they turkeys come out fantastic...
This is a 23# on the large. Mighty good!!! (Thanks Max for sharing your methods).
