I would love to hear of any recipes that would be good for Weight Watchers or Low calorie or fat!! If you have any hints or recipes, would love to get them. Thanks bunches. I love my Big Green Egg...I have been cooking some incredibly delicious food. :laugh:

    My wife started doing weight watches two weeks ago. Just had a very interesting lunch. Cucumbers carrots a few black olives 2 ounces per sandwich of leftover chicken 1:1 mircle whip and fat free yogurt. It was very good

    Nature Boys veggies are great.We have cooked these many using different veggies.The pineapple is really good.

    If you like shrimp.

    Shrimp, Scampi, Weight Watchers, Squeeze

    Traditional shrimp scampi is loaded with butter. Our version eliminates most of the fat, but still packs in all the flavor.


    INGREDIENTS:
    2 tsp olive oil
    4 medium garlic clove(s), minced
    1 tsp dried oregano
    1 lb shrimp, medium, peeled and deveined
    1/4 cup wine, dry white or vermouth
    2 tsp cornstarch
    3/4 cup reduced-sodium chicken broth
    1/8 tsp table salt, or to taste
    8 oz uncooked linguini, cooked and kept hot
    1/8 tsp black pepper, or to taste
    1/4 cup parsley, fresh, chopped




    Procedure;
    1 Heat oil in a large skillet over medium-high heat. Add garlic and sauté 1 minute. Add oregano and stir to coat. Add shrimp and sauté until bright pink, stirring frequently, about 3 minutes. Add wine and simmer about 1 minute.
    2 Dissolve cornstarch in chicken broth and whisk until blended. Add mixture to skillet and simmer 2 minutes, until sauce thickens. Season to taste with salt and pepper.
    3 Transfer cooked linguini to four individual shallow bowls and spoon shrimp and sauce over top; sprinkle with parsley. Yields about 1 1/3 cups of pasta, 1/4 cup of sauce and 3 ounces of shrimp per serving.


    Preparation time: 20 minutes
    Cooking time: 10 minutes

    Jerk Chicken Thighs with Mango Salsa
    POINTS: 4
    INSTRUCTIONS

    3/4 tsp ground cinnamon
    3/4 tsp ground allspice
    1/2 tsp garlic salt
    1/4 tsp dried thyme
    1/4 tsp table salt
    1/4 tsp black pepper
    1/8 tsp cayenne pepper, or to taste
    2 Tbsp fresh lime juice, divided
    1 pound boneless, skinless chicken thigh(s), about 6 thighs

    Salsa
    1 large mango(es), diced
    2 small shallot(s), finely chopped
    1 large jalapeno pepper(s), cored, seeded and minced (do not touch seeds with bare hands)
    1 Tbsp cilantro, fresh, minced
    1/8 tsp table salt, or to taste



    Preheat grill to medium heat.


    On a plate, combine cinnamon, allspice, garlic salt, thyme, table salt, black pepper, cayenne pepper and 1 tablespoon of lime juice; mix to a paste. Brush both sides of chicken with seasoning paste; set aside for 10 minutes to allow flavors to blend.


    Meanwhile, in a medium bowl, combine salsa ingredients.


    Place chicken on preheated grill. Grill for 10 minutes; flip and grill until cooked through, about 6 minutes more. Cut each chicken thigh in half to serve. Yields 3 pieces of chicken (1 1/2 thighs total) and about 1/2 cup of salsa per serving.
