This passed weekend I a made sausage fattie (seasoned with DD) and baked some biscuits. I poured the raw scrambled eggs into a formed circular cylinder. I should have used a cylinder about the diameter of the biscuit. However I was able to cut the larger formed egg patties in quarters to fit in the biscuit. Once the fattie came out of the 275 degree egg at an internal temp of 170 I let her rest for an hour covered in aluminum foil and finally sliced and put together the mini sandwich. I can’t believe how fast these little suckers disappeared. It was a great hit with the kids and wife. Next time I try this I will use regular flavor Jimmy Dean’s (I used maple and thought it was to sweet) and add some cheese to the sandwich.
