Stuff I cooked this weekend

During the summer I only have the small at home as my other eggs are in the competition trailer. We usually limit it to burgers, steak, etc for quick weeknight cooks. Decided to do a few new things this weekend.
Flat Iron Steak And Shrooms. Flat Iron cooked at 500 for about 5 min each side and shrooms in a small cast iron skillet with butter. Wow. Flat Irons rock.
Then decided to try some smoked bologna. Never done this before and after doing it would recommend. I scored the top and rubbed with EVOO and Dizzy Pig Course. 3 hours at 250 with hickory and cherry. I scored kind of deep and when we took it off I sliced the chunks and dipped in some Blues Hog Honey Mustard. Then in some Bob E Que sauce. t was pretty good so we cubed the rest and made it kind of like burnt ends and then a sandwich at the end.
Dogs were getting hungry so I threw on some biscuits based of a recipe from Mollyshark.
While the bologna was smoking I threw on two pounds of andouille sausage for some gumbo.

Now those are some great choices there my man!
Im always looking to do something different but always end up doing the same. Just like now as I speak I am doing simple fresh burgers and Nathan's dogs- not even worth taking photos of.
Looks great! And I must do that flank steak for the 1st time some time soon!

Looks like you had a great weekend of cooking. And I must say it all looks great. I have not tried flat iron steak, but I think I need to. I was at my wifes brother in laws this weekend. He ( my brother in law) loves his weber grill, just wish he could cook better. LOL He made us sirloin Sat. night, cook it for about 40 minutes to perfect way over cooked and a bit dry. I have tried to convince him of buying an egg with no luck.

Yeah, those flat irons are pretty good. I want to try them with some fajitas. I was on the WIKI site looking up flat iron and it is the second most tender cut behind the tenderloin. I got mine for $6.99 lb and thought that was a good deal.
