I just simmer them in a cast iron pan at 250# in olive oil with a little butter. Great topping for veal, meatball or sausage sandwiches.

here you go this is good
Peppers, Chili, Assorted, Stuffed
peppers of your choice
Italian sausages
2 tbs pizza sauce or tomato sauce
cheese
1 cut tops off of peppers
2 clean out seeds and ribs
3 mix all other ingredients
4 stuff peppers
5 place on BGE indirect at 350 for about an hour or until sausage reaches 160 degrees

Quite often in the Summer I do an "assorted" (aka garden clean out) ragout of sweet peppers, mushrooms, onions, garlic, tomatoes, balsamic vinegar, kosher salt, black pepper, and olive oil.
I use an old commercial Calphalon pan, but foil pans work well too.
Just saute direct until everything is soft and a little brown. You can deglaze with a little stock or wine.
