First cook doing two boston butts (both 7 1/2). Dome temp has been stable for over an hour at 250. Water in pan, have not opened lid (LBGE). Meat probe set to first alert at 160. I have read everything I can get my hands on and you guys on this forum have prepared me well. Is it safe for me to go to sleep now? I gotta get up at 0815 hrs.
