quick rib question

Tomorrow i will be doing 6 slabs of baby backs, my first time with that quanity. My question is - how far ahead of the laying the ribs on the BGE can i rub with mustard and cover with dizzy pig and refrigerate? I've think i read two hours, but i recall someone stating a longer time than that. Actually two hours ahead would be fine. What do you eggperts recommend?

    i have done everything from day before to lighting the egg and then starting my prep.. i think i like the day before not for taste but for convience ;)
