Anyone have a good recipe for eggplant on the BGE? Thought this might be an interesting adventure.[p]Thanks

Buy the Baby Eggplants, cut them in half, rub with olive oil and grill at 325 for about 4 minutes per side. Start with flesh side down and flip to skin side.[p]Simple and delicious,

The only thing I would add to your suggestion is garlic. Garlic and eggplant and olive oil, what a combination. Oh, and the Egg!
