Tonights Egg sacrifice: Part who knows

Well hear is tonights sacrifice. Two ducks, squellers that were flying this morning, lamb chops and top sirloin. The duck is on now with the DigiQ at 325 degrees stuffed with 1/2 apple and rub of salt,cummin,ginger,red pepper,allspice. Going to do a veriation of Trexing on the chops and a full Trex on the sirloin when the duck is done. Never Trexed any thing, just read Whiz web sight. Any tips appreciated and wish me luck. Can see lamb discussion and how I plan to do on my "Lamb" post. Will post as it goes.

Actually "Bat out of Hell" at the time. The ducks are done. Now waiting on wife to get sides togeather and then start toasting the Egg for Trex. Egg holding at 323.

WARNING:LONG RANT AHEAD!! This is a pic of my 14 year old arabian mare and my Harley. I can run down any horse in this part of the country if you give us an hour. If you ever read the forum check I say "horses medicated" Reason is she has melanoma cancer. With out going into detail it is not A death sentance for a gray horse. She is on cemo 3x a day for 3 months and appears to be working. It is a complete rush to "fly" for an hour. The Harley I built the motor. Rode it for 500 miles to break it in never over 60 mph. Dynoed 94 horses and 96 lbs torque. Got on a long 4 lain,stoped it and red lined all 5 gears to 120 mph.What a rush. Guess it is stranged but kind of got that feeling tonight. Fire 700 degrees, flash back that singed hair off my hand even though cracked lid, trying to heat up,cool down get stake seared, lamb hot h2o bath and cooked, stake back on. You get the idea. And the finnal release:well you can see. Thanks for all the advice. IT WAS GREAT!
