Will the high temp DigiQ probes work on the Polder and Maverick temp units?

You would have to call BBQ Guru to find out. If I had to guess, I'd say no unless BBQ Guru intended them to be compatible. From what I've read about thermocouples, they depend on the metal used in the two wires, the length of the cable (I think) etc. Thermocouples turned out to be more complicated than you might imagine at first blush.The Naked Whiz

The DigiQ probes have a larger base (tip) that any other meat thermometer that i have used including the Polder. You might find some kind of adapter but they will not work as a "plug and play".
