First Spatchcock Chicken

Cooked mt first spatchcock chicken, an 8.5 pounder. First a nice coating of EVOO then coated with Dinosaur Creole rub. Put in the refrigerator for 2 hours uncovered. Cooked at 350 for 2 hours using a little hickory, breast at 165, and let rest for 15 minutes while I made cajun corn and perfect rice. Great chicken, nice and juicy and tender.
