You better get up early if you're planning on cooking that bird tomorrow! I cook mine at 325 degrees and one that size would take between 6-7 hours with a 'full' load of lump......I wouldn't even have a WAG how long it would take at 250......

egret,[p]so if I put it on around 10 tonight at 250 let it go through the night, then kick it up to 375 I'd be better?

If it takes 7 hours at 325 I'll guess (and this is only a guess) it would take at least 10-12 hours. That being the case, you could start it late tonight and jack up the temp. near the end. Personally, I don't cook poultry at low temps. like that.......

25 min./pound @225 is a good rule of thumb. Just did an 11# @ 225 for about 5.5 to 6 hours. It was perfect.

We never brined our turkeys. So, I don't know if that cooking the bird quicker. The customer picked them out, we added a rub and cooked at 250 for about 6-7 hours. 325 is 15 minutes per LB.
Sold over 60 every T-Day. Stick with a fruit wood. Do KISS it, if this is your first.
We had an offset, so it might make a difference.[p]Mike
