7 racks of ribs vertically [p]Although some have figured out how to shoehorn more than double that.

Six is about my max, and that causes some problems if you want to lay them flat to sauce them and firm them up at the end. Seven or eight would be no problem if you didn't mind that they touched, and never had to lay them flat. When I do six racks, I sauce and finish them in "shifts," foiling three on the side for 15-30 minutes while I sauce/finish three racks, then switch places. My 2c.
