WOW! Peanut Butter Chicken!

I just had lunch at a Chinese buffet and they had (amongst a ton of other stuff!!!) what they called Peanut Butter Chicken. It was obviously a chicken breast coated with a thin layer of creamy peanut butter, fried and then cut into strips. It was delicious. Any body got a recipe or technique for such?

YB, not really as it was obvious they were cooked first and then sliced into strips so the coating didn't dominate the taste - enhanced YES. That recipe looks good though! Ever try it?

I posted a recipe some time ago that uses peanut butter. The recipe is for chicken pieces, but the marinade could easily be used on sliced chicken...to be skewered? The peanut butter does tend to burn if cooked too hot, but it adds a great flavor. The lemongrass can easily be eliminated from the recipe with good results. [p]I use peanut butter quite a bit on chicken.[p]beers
