I have good luck with a light brine ratio of 1 cup kosher salt, 1 cup brown sugar to 1 gallon spring water.
Your pictures look really nice, makes me want to get the brine bucket out.

Pork Butt Mike,[p]How long did you soak the ham in plain water before you decided to cook it...[p]If you didn't next time try soaking for a couple of hours to remove some of the salts..
