Question about smoking 6 racks of baby backs (m)
Options
I'm going to try out my new V-Rack so I can do 6 slabs at a time. Can someone recommend a total cook time @ around 215-225 assuming that is the right temp?[p]I was thinking an hour, then wrap in foil for another hour, then maybe 45 minutes to a third hour unwrapped since we like ours a bit browned. Also, should we crank up the egg the last 15 minutes or so if we like them very brown or will it matter at that point?[p]Any help would be appreciated.

I just put on four racks. I am using the 3-1-1 method. A very popular method on the forum unless you use CW Mike's method (which I have and it is great!). I am going 3 hours at 250. Then, one hour wrapped in foil and the last hour indirect at 250-260*.

At those temps I think you are looking at 3 hours indirect, then 1.5 hours in the foil, and maybe another hour flipping and saucing at the end.[p]Have fun with it and enjoy those ribs.

Eggmeister,[p]Ok so a total of about 5 hours give a take a few correct? I was thinking 250 would be too high for that length of time. [p]I will give it a try. Thanks for your insight.

250 is a little high . . .go 200-225. I don't know what I was thinking. When you foil for an hour and sauce for an hour, THEN go to 225-250.
