Country-Style Ribs

Anybody ever cook country-style pork ribs on the Egg? My understanding is that they're not really ribs, right? What do you do with them?[p]Thanks.[p]Matt

Matt,[p] I believe Dizzy Pig has an excellent recipe for these on their site.[p]

I do country-style ribs from time to time. I think they are very flavorful. As I understand it, they are the end pieces from a trimmed rack of ribs, and so they don't have a bone. I just do them 3-1-1 as usual....

I like to cut them into cubes, marinate them and cook them on skewers as kebabs.

Those things are great, and can be got for good prices. I cook 'em just like porkchops, hot and fast with plenty of rub for a good crust.

Matt,[p] If I could do it justice my name would be Chris [p]Seriously it has a maple flavor to it with a bit of a kick. [p]Truthfully I make my own sauces and rubs too, but when I get lazy I use the Dizzy Pig stuff. I get lazy a lot.
