any good recipes and proper cooking direct or indirect heat temp wood chips etc. any info to make this fresh fish awsome.[p]thanks

  • Stan Rollison,[p]It's great on a cedar plank/alder plank or smoked w/ alder chunks. I've always done direct, w/ a simple olive oil, sea salt & cracked pepper seasoning.
    Also great w/o any smoke. I prefer a little smoke flavor though.
    You can squeeze a little lime on it when done. Leftovers make great tacos. [p]Enjoy.

    Get a very hot fire going and place a cast iron skillet on the grate for about 15 min. While this is heating, dip fillets in melted butter then sprinkle with blackening spices ( Paul Prudommes Redfish Magic). When pan is hot, put fillets in for exactly two min. per side; no more! Be very careful when turning. Serve with a sweet / hot mango salsa. Diced fresh mango,sweet red pepper,minced jalapeno, a few tbs. commercial salsa and a Tbl. apple jelly.

    <p />Stan Rollison,[p]Here's some Mahi Mahi fillets I cooked tonight. Marinted in Newman's creamy ceasar salad dressing, sprinkle of Raggin' River, cooked direct for four minutes per side at 400 degrees. Turned out pretty tasty.
