Just started my first midnight brisket on the egg.[p]In the past, I used a weber smokey mountain smoker....got up quite a bit to check temp /adjust vents....how much monitoring should I do on the egg?[p]Thanks for input.[p]Happy Quatro de Julio.[p]Saucehog

Sleep well. :-) I haven't done a ton of overnights and am always nervous, all have cooked successfully through the night. I woke up and checked on the cooks. Habit. I should have slept.

PigsEye,
Based on the way the egg holds temp, I should just sleep well. I think the nervous annie in me will get up every 3-4 hours.[p]Maybe if I drink enough beer, I can sleep until 7.[p]Saucehog

I just get the temp where I want it with plenty coals and go to sleep.
