I was gonna cook a shoulder using the guru last night but it was raining like crazy sooooooooo I cancelled it. My question is this. How bad will it be if I cook it at a slightly higher temp....say 325 instead of 225 to speed up the cook....I am running out of time.[p]Jan

Metalhead,[p]Should be just fine. I just finished my first overnighter and while I slept the temp crept up to about 325 or so. Woke up to a butt at 201o. Tastes just fine.[p]In other news, I usually do a day of smoke so picked up the but the day before and only then realized that you need to buy the but two days in advance to do an over night brine. I ended up only dry rubbing and must say I much prefer brined butt.
