SEARING TEMPS FOR STEAK

Having trouble getting the egg to come up to 700+ for searing my seaks. Had no trouble in the past. Currently egg will not go much above 500+. QUESTION: Do I have a problem with my Temp Gage or do I need to clean out my egg and have a vent problem. I had plenty of Big Green Egg lump and the fire was glowing all around. Any suggestions?

    Options
    700+ is all about airflow. My guess is that your lump is too compacted in the firebox to allow free airflow. That happens when you get too many chips and small pieces dumped in along with the good size pieces. Break it down, clean up all the old ash, and hand select your lump for your next 700+. Only put in medium to large chunks. You can burn the chips in your next low-n-slow.
