I have a recipe for Dark German Rye Bread. It calls for honey and I want to substitute molasses to make it darker and stronger. Is the ratio 1:1 molasses for honey? Thanks in advance.

You will be fine with a 1 to 1 ratio. You're right, molasses has more flavor and will make the rye bread darker.

Great. Start with big clean load of lump and let the egg settle in for a while at 400 just to soak up heat. I usually bake at 400-450. The egg is a brick oven in certain ways and a well heated egg bakes better. You'll have an action packed day, for sure.
