Perhaps I missed this before but what are the ingredients in Fatties? Is (are) there recipts for Fatties? Could not find in Recipe section.

    I use Jimmy Dean Maple and regular store bought rolls. Cover with rub and cook direct on a raised grid till 175* internal. They get better every day.

    yea i was sitting here thinking about doing a few today right now doing bread . waiting on the news confrence to start and then i will cook bread (it is rising now first loaf on the egg) then maybe do two diffrent kinds breakfast and dinner fattie.

    Ijust got done making these and they,re on the cooker now.
    I didn't add the extra fat just what was in the butt.
    I had the ingredients so I thought i'd give it a shot.
    I rolled them in plastic wrap to form logs as in thirdeye,s site.
    Hoping for the best.

    Painter,[p]The Len Poli recipes are top notch for seasonings and technique.... In this case, you will be very satisified without the extra fat. I don't ever add extra fat when using ground butt for sausage.[p]Here are some other flavors of JD clone recipes I have collected.[p]~thirdeye~[p]
    Jimmy Dean Breakfast Sausage[p]Here are three varieties of the famous roll pork sausage. [p]Sage
    16 ounces ground pork
    1 teaspoon salt
    1/2 teaspoon dried parsley
    1/4 teaspoon rubbed sage
    1/4 teaspoon ground black pepper
    1/4 teaspoon dried thyme
    1/4 teaspoon crushed red pepper
    1/4 teaspoon coriander
    1/4 teaspoon MSG (such as Accent flavor enhancer)[p]Hot
    16 ounces ground pork
    1 teaspoon salt
    1/2 teaspoon cayenne pepper
    1/4 teaspoon rubbed sage
    1/4 teaspoon ground black pepper
    1/4 teaspoon crushed red pepper
    1/4 teaspoon coriander
    1/4 teaspoon MSG (such as Accent)[p]Maple
    16 ounces ground pork
    3 tablespoons maple flavored syrup
    1 teaspoon salt
    1/2 teaspoon MSG (such as Accent)
    1/4 teaspoon coriander [p]Combine all ingredients for the flavor of your choice in a medium bowl. Form the sausage into patties and cook in a skillet over medium heat until brown. [p]Makes 1 pound of sausage [p]
