[p]I rotated the racks twice during the first three hours. It was a quick an easy process - just pulled the whole rig out of the egg. After three hours, things were going so well, I decided not to foil. [p]
[p]Four racks were sauced, two kept dry. I broke two racks doing the bend test, which told me I waited too long before saucing. [p]
[p]I got a couple things to work out on the performance side. When I get that done, I'll pay off my bet....LOL TomComments
