Bird On!!!

Morning All:[p]This year we have a 20# bird. It was put in Julie's brine on Monday evening, took it out last night and put in fridge to dry skin. This morning added a quartered apple, orange & lemon to the cavity after covering it with herbed butter. Also apple and orange quarters in the drip pan. Added the ice bag and just waiting on the Egg to be ready. Using 3 small chunks of cherry for smoke (love that cherry).[p]PB230005.jpg[p]Put it on the Egg, poured 1/2 bottle of wine (2004 Les Carrielles Saumur AOC -- a crisp apple flavor), sprinkled on some Shakin' the Tree and ready to go.[p]PB230006.jpg[p]Really looking forward to the Mad Max gravy. Wanting to eat around 2:00pm so will let you know how it goes later.[p]Have a GREAT day!

    SSN686,[p]Here it is after 2 hours. Thigh temp is about 135 and breast temp about 124. Looks like it is getting a little quicker than I would like, but I'll try backing down on the Egg temp a little.[p]P11230604.jpg[p]Have a GREAT day!
