Whats all this chipotle stuff?

been reading several posts that mention chipotles....what exactly are they???? it`s obviously some form of pepper, however other than here on the forum I have never heard of them. I like things pretty hot but not unbearable. I use fairly regularly, and have homegrown, habanero..cayenne...and jalapeno....can anyone shed some light on these mysterious ( to me anyway ) chipotles and or any uses of them....[p]Thanks..Wess

Chipotles are smoked jalapenos. It is not super spicy, and has a distinctive smoky flavor. Have heard of folks making their own Chipotles on humpty. [p]HTH. April certainly is approaching quickly!

Thanks for all the great links..that was definately informative..might just look into making some myself as it is just about time to think about whats going in the garden this year..I would personally lean towards a powder, I did that with my cayennes from last year...dehydrate and grind them..use that stuff in a whole lot of things I cook.[p]Wess

WessB,[p]I've dried peppers before, that I have grown in my garden. Jalapeno's, Serrano (sp) and other's. How do you get them to a powder? Just keep grinding with your food processor?[p]Thanks WessB,[p]Mick

I bought a coffe grinder that I use for nothing but peppers...works great..and honestly..the first time I did any, I used my pepper grinder..was a royal PIA and took hours. I have a dehydrator that I used to dry them and then just grind em up into powder and put it into and empty spice jar..[p]Wess
