where can i find several recipes about smoking a turkey on lg & xl . i will take all or any recipes. thanks backdraft sc

    Just my take. It's easy. Lg BGE. Frozen turkey, thawed, dried overnight in frig. No need to brine as most turkeys already have liquid added (brine). Bring egg to 350 degrees. I use pecan, apple, or maple chips. Mesquite or Hickory is too strong. Platesetter feet up, drip pan, grate. I put turkey on another grate. easier to remove. See pic. Salt and pepper inside of turkey, add veggies, onion, celery carrot, apple, to help keep it moist inside. Truss. See pic. lightly oil turkey, salt and pepper. Make sure BGE is smoking before you add turkey. Cook 140 internal (thigh). I use a remote thermometer. Baste with soy sauce to help give it the nice color. See pic. Never got a dried out one. When using carcass to make gravy, don't use skin, just bones, wing tips OK. Too smokey.

    Hey, Caution! USDA recommends 165 as minimum cook temp for poultry. Many use that for breast and want as much as 180 for legs.

    My fridge has never been warm enough to thaw a turkey out overnight. 
    I hope the op has not been holding his turkey for 10 yrs waiting on an answer :o

    Of of course if your fridge is hot, maybe 140 would work as its already part the way cooked =)=)
