    I know this is a year old (great bump Theo) but damn that is a good looking roast. Is it worth the time to brine these?

    @Eggdicted_Dawgfan  I think so, because to me, making the brine is not a lot of work.  I have a instant hot water dispenser in the kitchen. I take all the spices, put them in a pot, add the hot water, and let it steep like a tea for a half hour or so.  Then I add ice and put in the fridge till it is < 40 F. Then I put the meat in, then back in the fridge it goes for an overnight bath.  
    From beginning to end of getting the brine ready to the meat is in it is about 20 mins active work, an hour or so duration total
