Bone in or out????

<p />Howdy all,[p]I have done 2 butt's so far. One with bone in and one without. Both cooked the same way. I thought the one with bone was tastier and more moist than the other. The one without was stringier and a little tougher to chew. My imagination or what? Also the one without was done quicker. Go figure.[p]Thanks egger's[p]Mick

MickeyT., Spending 20 years in the grocery and listening to my mother. IMHO you are not imagining things. Roasts with bones whether it be beef or pork tend to have a better flavor. It is specially true in beef. When the beef industry went to boneless beef the quality (actually taste) of roasts changed quite abit. My mother still to this day says you can't beat a seven bone chuck roast.[p]CWM[p]

MickeyT., Glad to meet ya'. I have to agree with CWM. I've cooked a lot of both and it definitely seems to me that bone-in is juicier and just tastes better. Maybe it really doesn't matter, but if not, it fooled me, and now thats what I usually buy.

Go for the bone in, as the bone marrow gives it that extra flavor kick. Even with steak I always prefer to get ones with bone in.
