My first brisket cook and just when I was ready to put the meat on the egg it started raining. So its my first rain cook also.
I rubbed it with just a simple salt and pepper rub and let it sit on the counter for an hour like Franklin recommends. It went on the egg at stabilized at 250. After it stabilized agin I bumped the temp to 275. Been on an hour as I write this and the meat probe is reading 115.

If you want to eat in a couple hours I would foil and bump the temp to 350. You'll want a good 30-45 minute rest at least before serving.Milton, GA

I took your advice and bumped it to 350 after wrapping it.

I pulled it at 204 and let it sit wrapped for about 45 minutes. It was awesome. i would have expected a larger smoke ring but other than that it was tender and had a great taste to it.

I'm very happy with my first brisket attempt. Just a flat but it wasn't dry and it was all consumed. The family liked it so I guess that's a win.

I've never had the thick pink smoke ring on any I've done either! Smoke flavor was there, but not the prized pink smoke ring.
I've read amazing ribs info about a smoke ring and got over it, but must be something about the bge and limited air/oxygen in the cooking environment. Just a guess on my part!
