Couple of ABT questions
Options
Can i combine cheddar cheese with the cream cheese? also, would a dip like perhaps ranch sauce make it taste better or do you feel it would just mask the flavors?

I think both of those sound really good. That is the great thing about ABT - anything goes. My wife temporarily can't eat cow's milk cheese so this past weeked I stuffed them with goats milk cheese. And they were great.

I like to let the cream cheese get to room temp..then I mix in some cheddar and mozzarella..and I mix in some Cajun spices...

Luis,[p]I've used Mexican Queso Enchilado a couple of times. My favorite is adding a rub at the rate of about 1 tsp per 1/3 Cup of cream cheese. I use Raning River.[p]For a sauce on the side, I've only tried pepper jelly.
