Margarita Minis

Margarita Minis
Ingredients:
1 box lemon cake mix
1 box lemon instant pudding mix
1 cup water
1/3 cup vegetable oil
1/2 cup Jose Cuervo Gold Tequila
3 eggs
2 tbsp key lime juice (regular limes can be used if key limes not avail)
1 tbsp key lime zest
3 boxes of Joy Mini Ice Cream Cones
6 drops of Green Food Coloring
4 drops of Neon Green Food Coloring
Glaze:
1 cup confectioners’ sugar
2 tbsp tequila
2 tbsp key lime juice
1 tsp key lime zest
3 boxes of Joy Mini Ice Cream Cones
Baking Instructions:
Preheat Egg to 375-400 degrees, plate-setter in, legs up.
Combine 1st 8 ingredients in mixing bowl by hand with a whisk.
Batter will seem thick because of pudding mix.
Load the mini cone holder with the cones. (Purchase from Joy or try using jalapeno popper holders that are open on the bottom)
Fill each cone to 2/3 full with the mix. (Large spoon works good)
Bake for 8minutes then check for doneness with toothpick.
Bake till toothpick shows clean.
Let cool before you glaze.
For glaze: Whisk confectioners’ sugar, tequila, true lime and zest. I recommend adding the tequila and lime juice in small amounts intermittently. You can adjust the amount of tequila and lime to your tastes, if you prefer a stronger or milder taste. Pour the glaze into a ramekin and dip each cone for the topping. Sprinkle a small amount of Green Margarita Salt on each cone.
Makes about 110-120 Margarita Mini Cones!
