I have found a new hobby to incorporate with the Kamado. So far I will call it beginners luck!! I am learning as much as I can but have a long way to go. I have started reading the Josey baker bread book and I am cooking each lesson in the book.
So far I have completed two of the nine lessons and I am getting better as I go.
I have began making a sour dough starter from scratch so it should be ready in the next two weeks.
I am am currnelty making whole wheat pre-ferments bakes and evolving through the books progression.

Is a "pre-ferment" the same as a "starter" ?
How often do you have to feed it? -
I'm not sure ill answer correctly but a pre-ferment is not really a starter. It is also known as a poolish. Basically you take part of the dough and pre make it and let it sit for up to 16 hours before mixing the rest of the ingredients in the dough.
I use use a whole wheat poolish (pre-ferment) and really like it.
My my sourdough starter is only two days in. It will take a good 2 to 3 weeks for it to be ready.
They yield different rent flavours when making bread -

I am really enjoying it. Wasn't sure what to expect but I guess I just love cooking. BBQ and now mixing in baking is a great hobby

I made this with a poolish. 15% dark rye, 15% multigrain, added caraway seed, onion flakes and sunflower seeds. 75% hydration. It was delicious
