Cast iron skillet ideas?

My wife got me both a large and small cast iron skillet for Valentine's Day. I am looking for some great yet simple ideas to use them on the egg.

The possibilities are endless. I use a cast iron skillet on the egg at least twice a week. My favorite is to use it to blacken fish or chicken. You get the skillet super hot, add a tiny bit of oil, and then put your rubbed meat into the pan, wait a few minutes, and flip. It will produce a ton of smoke and a great flavor.
I also love using the cast iron skillet to cook burgers.

With a the addition of a CI DO and a pizza pan you are good for just about everything you could every want to cook.
These days (since the addition of a blackstone) my primary use of CI is baking or side dishes. Doing a lot of bread, cobblers etc these days.Phoenix -
Get them seasoned up properly and go for it. Anything you would be hesitant to fry or sear inside because of the orders and smoke are easily done now outside. Burgers, Steak, Chicken, Pork Chops, you name it, it's a great alternative to straight grilling.

Btw. as far as seasoning goes, and others will disagree, I do not like flax oil.
I've got a pretty respectable CI collection, and the only two pieces I've ever had to re-season are the two pieces I've tried Flax on. Everything else is black and perfect.
Pure pork lard - wiped on while warm - wipe it all off - on gas grill for 2 hours - shut off grill and let it cool for 2 hours in the grill - repeat 5-6 times. Perfect.

DO is Dutch Oven
Cast iron pizza and cast iron burgers are hard to beat.___________________________________

I use my CI for baby red potatoes and cheese. Usually olive oil, potatoes, layer of cheese, onions seasoning, potatoes, cheese, garlic, anything that sounds good to you. 375 degrees for about an hour or a little more. Everyone loves em.

Rice dishes with chicken thighs on top. Are always good.
Also like to make Frittatas on the egg in my CI pans.
I've wanted to make a layered scalloped potatoes as well but haven't got there yet! Good luck with it! -
When using a cast iron pan, do I use direct or indirect heat to make a pizza?

Wow, that looks great!!!! Now you've got me wanting to try this. Question for you CI folks. How do you clean your CI without removing the seasoning? Hope this isn't hi-jacking a thread. Seems to fit.

Reverse sear a steak using CI for your sear! When doing that I also use my CI skillet as the plate setter on the regular grid and the steak on a raised grid.Canton, GA
