An attempt to lose a few lbs while still keeping the egg in service led me to stop by the local fish market. Picked up some fresh yellow fin and marinated in a soy, sesame oil, garlic, ginger bath.
An hour or so in the bag and then fired up the egg to around 500. CI with some peanut oil and seared for 2 min per side.
Rested for 5-10 then sliced thin on some Asian slaw and sticky rice. I should make this more often! Even my 7 year old was amazed by the flavor.

Wow - very nice. The marinate can also be used successfully for the waistline friendly pork tenderloin, granted not near as fantastic as your tuna, but nice just the same.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!
