@CPARKTX posted a marinate recipe in a thread where he cooked pollo asada.

Since I had a chuck roast in the fridge, I used his recipe, less the liquid ingredients as a rub for the chuck roast. I thru the Chuckie on the Small egg at 300 degrees with some apple and orange wood for smoke and pulled it at 160 degrees internal temp after a reverse sear with the plate setter in place.
I added some beef broth in a Dutch oven along with some diced tomato, onion and jalapeño peppers. Thru the Chuckie into the pool and added more diced onion, tomato and jalapeños. I let it cook for 3 hours and then pulled the beef. The texture was soft with a nice bark and it had a nice Fajuita flavor with a touch of smoke. The tacos were very good.
