When wrapping several racks of ribs with foil at one time, is it ok...

Im planning to do several racks of baby backs tomorrow using the 2-2-1 method (unless someone convinces me to use a diff method). Anyway, it calls for foil wrapping the ribs for the 2nd stage of the process. Would it be acceptable to place all the racks into one large aluminum tray - and seal it tightly with foil?  Would that achieve a similar or same effect?

    I suppose, but I wouldn't. It's a couple bits of foil?

    The reason for the foil is so the meat can braise in the liquid. If you stack them you won't get the same effect. You can wrap side by side but if it were me that would be it.

    It is fine to use a foil pan.  If you add some liquid and cover tightly it will steam them.  One tip is to only add a little liquid because you will get juice from the ribs.  I have tried it both ways and the foil pan is easier and better results.  

    Only tip I will add is keep an eye on them.  It is easy to over do it and them to get too mushy.

    If you have the time, do the Google on car wash mike's ribs.   Best done with a controller though to really follow his temp recommendations so maybe wait till you do the controller thing, but he has made me rib hero  in the swordsmn household. :-)
