I think it might be worth a try. I suppose the only downside is you are removing some of the best pork from the pulled pork, however in a 8 lb butt I doubt you would really be able to tell a difference.
I would keep a close eye on it though. It seems it might get done way before the rest if cooked cooked separately.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
