Chinese for the 4th

The family requested Chinese my wok is packed away as we are living in an apartment temporarily while our new house is being finished so I went and bought a cheap one at the store and made our favorites and a vegetarian dish for my daughter.

crab wontons minus the crab for the resident vegetarian
Fried rice
Mongolian beef. And I somehow thought I took pics of the orange chicken, but I did not probably too many adult beverages at that time. But I put some chicken breast tenders in the sous vide and finished in the wok with a spicy orange sauce. For the vegetarian I found a chick pea chicken at the store and put it in the wok with the same spicy orange sauce. All turned out well one of my go to meals that the whole family likes. Very time consuming but I enjoy it.

Here are the recipies I follow.

I always use alittle more sugar and green onions in this one than it calls for. the onions replace the crabmeat for us, I use Turbinado sugar, and fry them in my deep fryer not on the egg.

I have cheated on this one the last couple of times, Pei Wei has great brown rice so we go buy the rice instead of making it and add all of the other ingerdients, it costs $3.00 and way better than I could boil up here. i have never added the meat or bean sprouts, and generally double the egg.

This one I make as directed I usually make double the sauce so we have some on the side.
I havent found a good orange chicken recipie so if anyone has one please share. This time I used Honey Seared sauce from Pei Wei and added red pepper flakes. As far as temp I just put the wok on the grate at the fire ring the hotter the better, you cant really follow the times in these recipies you have to go by how it looks based on the higher temps than using a stovetop. This time the wok I used has a handle that required me to raise the grate do it took a little longer than normal, but was easier to use. Hope this helps let me know how it goes
