Anyone doing anything interesting with Vidalia Onions this time of year?

I enjoy roasting them with a little beef broth and butter. Just looking for some other ideas.

Around here we have Vidalia but we also have Noonday onions. They're a sweet onion grown out in East Texas. So I'm eating the heck out of the Noonday's right now. Once they go away I'll hope there are Vidalia's left.
I'll eat them on about anything. My favorite thing to do with them is cook them down real slowly in a cast iron pan with some butter and some olive oil until they're caramelized and put them on Fajitas.

not interesting, but my go to is to skin, make a little cut out in the top , couple pats of butter, sprinkle w/ tobacco pepper, drizzle of olive oil, and top w/ a fresh jalopena, foil and let er grill while the egg is doing its thing. pull after about 20 min or soSTAY THIRSTY MY FRIENDS!GIVE ME OYSTERS AND BEER FOR DINNER EVERY DAY OF THE YEAR& I'LL FEEL FINE!SW Georgia : LARGE & MINI BGE

I like to take a whole onion. Slice across to make wedges, but don't cut through the onion. Shove butter in each slit and 1-2 garlic cloves too. Little salt and pepper. Wrap in tin foil, throw on the hot spot for about 5 mins, then move off to the side for the remainder of the cook. They're awesome. I didn't get a plated pic, but here's the balls on the Egg.

Core it, stuff with beef bouillon and butter. One egg in foil for an hour and enjoy. Sounds about like what you.

I think I'm going to wrap a couple in foil and cook tonight to use on pizza tomorrow night - maybe a beefy one and a sriracha one for different pies

Like to take and cut an x in it about 75% of the way down to the base, then put butter and Beef bouillon in it and wrap it in foil cook on the grill for about 45 minutes unwrap and enjoy.
Also so like to cut a thick slice about 3/4 of an inch stuff it with 80/20 burger seasoned with French onion soup. Once it's just about done put a heap of Swiss cheese on it and server on a grilled roll.XL BGE, KJ classic, Joe Jr, UDS x2 -
